Black-Eyed Peas Mucver (+12 Months)

  • 1 cup of black-eyed peas
  • 1 small zucchini
  • 1 egg
  • 2 tablespoons whole wheat flour or oat flour
  • A handful of fresh parsley
  • 1 teaspoon olive oil
  • Salt and pepper (optional)
How to prepare?

Wash the black-eyed peas, trim the ends, and chop them.

Grate the zucchini and squeeze out excess moisture.

In a bowl, combine grated zucchini, black-eyed peas, beaten egg, flour, and finely chopped parsley.

Season with salt and pepper if desired. Mix well until you have a homogeneous mixture.

Preheat the oven to 180°C. Grease a baking tray or line it with parchment paper.

Take small portions of the fritter mixture, roll them into balls in your palm, and then flatten them slightly to form fritter shapes.

Place the fritters on the greased or lined baking tray.

Bake in the preheated oven for approximately 25-30 minutes.
