Purslane Omelette Slices (+12 Months)
Ingredients
- 1/2 cup purslane (thoroughly washed and chopped)
- 1 egg
- 1 tablespoon cottage cheese
- A pinch of salt (optional)
- Olive oil (for cooking)
How to prepare?

Wash purslane thoroughly and chop it finely.
Crack the egg into a bowl. Add chopped purslane, cheese and a pinch of salt (if using).
Mix everything well. Heat olive oil in a frying pan over medium heat.
Pour the egg mixture into the pan and cook until the edges are golden brown and the top is set.
Carefully flip the omelette using a spatula and cook the other side until golden brown.
Remove from the pan and let it cool for a moment. Slice or cut into pieces before serving to your baby.
