Zucchini Yogurt Cake (+12 Months)
Ingredients
- 1 cup grated zucchini
- 1/2 cup plain yogurt
- 2 eggs
- 1/4 cup olive oil
- 1/2 cup whole wheat flour
- 1/2 cup oat flour
How to prepare?
Instructions
Grate the zucchini and squeeze out excess moisture by pressing or draining.
Preheat the oven to 180°C. In a large mixing bowl, combine grated zucchini, yogurt, eggs, and olive oil.
In a separate bowl, mix together whole wheat flour, oat flour.
Add these dry ingredients to the zucchini mixture and stir until smooth.
Pour the batter into a greased or parchment-lined cake pan.
Bake in the preheated oven for about 25-30 minutes.
